Description
Régnard is one of the oldest houses in Chablis, in the northernmost part of Burgundy, and among the few still working from the historic centre of the town. Chablis is defined by its Kimmeridgian soil, a limestone and clay bedrock full of fossilised marine shells that gives the wine its distinctive stony, saline character. The cool, northern continental climate ripens Chardonnay slowly and preserves high natural acidity, which is the backbone of the style. This wine is fermented and aged in stainless steel rather than oak, a choice that keeps it reductive and precise, protecting the primary fruit and letting the mineral quality of the site come through unmasked. It is pale straw with a green tint. The nose is clean and citrus led, with lemon, green apple and pear over white flowers. The palate is taut and dry, with bright acidity and a chalky, saline finish that is the signature of unoaked Chablis. Serve well chilled at 8 to 10 degrees in a standard white glass.
