Maison Regnard, a Chablis house dating to 1860, makes this Chardonnay from the heart of the appellation. Unoaked and cool fermented, it is a crisp, citric white with lemon, green apple and a stony, saline finish.
Description
Maison Regnard is one of the oldest houses in Chablis, founded in 1860 and still cellared in the historic centre of the town. Since 1984 it has been owned by Baron Patrick Ladoucette, who has kept to the classic Chablis style. This bottling comes from the main Chablis appellation, where Chardonnay grows on Kimmeridgian marl, a limestone-rich soil laced with fossilised oyster shells that gives Chablis its cool, saline minerality. The northern Burgundian climate keeps the fruit taut and the acidity high. Vinification is clean and made without oak, a deliberate choice that leaves the grape and the terroir unmasked; cool fermentation preserves the citrus and orchard-fruit aromatics and the wine keeps its precise, mineral cut. The result is pale yellow with green reflections. The nose is bright and citrus led, with lemon, orange peel and grapefruit alongside green apple and white flowers, and the palate is dry and lean, its lively acidity carrying a stony, saline finish. Serve well chilled at 9 to 11 degrees in a standard white glass. It is a natural partner for oysters and raw shellfish, and works with grilled white fish, smoked salmon and fresh goat cheese.
