Description
Raul Perez, one of the leading names in modern Spanish wine, makes El Erial de Valdecanada in Bierzo, in Castilla y Leon. The wine comes from Godello and old Palomino planted on the sandy slate and clay soils around Valdecanada, farmed organically. What sets it apart is the ageing: the wine spends three months under a veil of flor, the film of yeast better known from Jerez. Under flor the wine is protected from full oxidation while the yeast feeds on it, giving a savoury, yeasty, nutty character and a saline lift very different from a standard white. It pours pale gold and shows green apple, citrus, almond, dried herbs and a briny, slightly bruised apple note from the flor. The palate is dry, textured and long, with real cut and a salty finish. This is a distinctive white for drinkers who enjoy Sherry influenced styles. Serve it at 11 to 13 degrees in a white wine glass.

Additional information
The flor character makes this a natural with fish and seafood, from grilled white fish to prawns and crab. It also suits roast chicken, cured ham and hard nutty cheeses, much as a dry Sherry would.
