Description
Raúl Moreno works in Jerez de la Frontera and Sanlúcar de Barrameda, the heart of Andalusian white-wine country, and Destellos reflects his willingness to break with local habit. The wine blends the classic Palomino with Arinto, a Portuguese grape prized for its high natural acidity, which he boldly planted in the region in 2021. Arinto gives freshness and cut, while Palomino contributes a chalky, saline character drawn from the albariza soils and the Atlantic climate of the coast. The wine is aged in wood, which lends a light texture and breadth without turning it heavy, and no flor is used, so the emphasis stays on primary fruit and freshness rather than oxidative or yeasty development. Farming is natural and organic. The colour is pale lemon with a green tint. The nose is bright and mineral, with green apple, lemon and white peach over white flowers and a saline note. The palate is dry, fresh and taut, the Arinto acidity driving citrus and orchard fruit to a clean, stony finish. Serve well chilled at 9 to 11 degrees in a white glass.
