Description
Ramón Bilbao Verdejo is the first white wine the Haro based winery produced in D.O. Rueda. Founded in 1924, the house built its name in Rioja before extending into Rueda, home to Spain's benchmark Verdejo. The region sits on a high plateau with a continental climate, hot days and cool nights, and free draining stony soils over limestone. That day to night swing preserves acidity and locks in the grape's green, herbal aromatics, while the poor soils temper vigour. This is made in a fresh, young style, with the fruit fermented cool in stainless steel to keep the primary aromas intact and no oak to blur them. Verdejo is naturally prone to oxidation, so protective handling in the cellar is central to holding its bright character. The wine is pale with green flashes. The nose leads with sliced green apple, white asparagus and fennel over a hint of blanched almond, a classic Verdejo signature. The palate is dry, light to medium bodied and vibrant, with citrus acidity and the grape's faint bitter almond twist on a clean finish. Serve at 8 to 10 degrees. It is a natural aperitif and a match for fish and shellfish.
