Description
Rafael Cambra Dos is a red from Rafael Cambra in D.O. Utiel-Requena, a blend of 40 percent Cabernet Sauvignon, 40 percent Cabernet Franc and 20 percent Monastrell. The vineyards sit in the l'Ombria mountain range, by the village of Fontanars, where the altitude tempers a Mediterranean climate and the sandy soils drain freely and keep the wines fresh. The harvest is gathered into small eight-kilogram boxes so the grapes reach the cellar whole and unbroken, followed by careful selection. The two Cabernets give the wine its backbone, structure and red-fruit and herbal character, while Monastrell adds body, dark fruit and warmth. The wine is aged ten months in French oak, enough to settle the tannins and add cedar and tobacco without burying the fruit. The colour is deep ruby, the nose offering red currant and plum, black pepper, dried herbs and a savoury, earthy note. The palate is medium to full bodied, with firm but fine tannin and fresh acidity carrying a long finish. Serve at 16 to 17 degrees, decanting briefly. It suits red meat, lamb and hard cheese.
