Quinta Sardonia is a biodynamic Bordeaux-style red from Castilla y León, advised by Peter Sisseck of Pingus. Tinto Fino leads a six grape blend aged 19 months in French oak, giving blackberry, raspberry and violet over a firm frame.
Description
Quinta Sardonia is a red from Bodega Quinta Sardonia in Castilla y León, made with advice from Peter Sisseck, the winemaker behind Pingus. The blend is led by Tinto Fino at around 58 per cent, with Cabernet Sauvignon near 30 per cent and smaller amounts of Syrah, Merlot, Petit Verdot, Cabernet Franc and Malbec. The climate is continental Mediterranean, marked by low rainfall, very hot summers and cold winters, with a thermal swing of around 18 degrees between day and night that ripens the fruit while holding acidity and aromatic freshness, keeping the 15 per cent alcohol balanced. The estate is farmed biodynamically, with low yields that concentrate the fruit. Ageing runs 19 months in French oak, where slow oxygen exchange firms the structure, polishes the tannins and adds restrained vanilla and spice. The colour is deep, opaque ruby. The nose offers blackberry, raspberry and violet over savoury, earthy depth and a fine oak frame. The palate is full and structured without weight, with dense ripe tannins, vivid freshness and a long, savoury finish. Serve at 17 to 18 degrees and decant ahead. Built for roast and grilled meats.
