Description
Quinta de Couselo lies in the O Rosal valley of D.O. Rías Baixas, in Atlantic Galicia, on land historically tied to the Santa María de Oia monastery on the rocky coast between Baiona and A Guarda. The blend is led by Albariño, the region's signature grape, with Caíño Blanco and Loureiro adding acidity and aromatic lift. The maritime climate is cool and wet, and the sandy granite soils near the ocean give the wines their taut structure and saline edge. Fermentation preserves the primary fruit, and a portion of the wine is aged in wood, which adds a little breadth and a savoury note without covering the varietal character. The colour is pale lemon. The nose is bright and coastal, with lemon and grapefruit joined by green apple and white peach over a floral note. The palate is fresh and precise, the acidity firm and the finish long, mineral and gently saline. Serve it cold at 8 to 10 degrees in a white wine glass. It is an obvious match for shellfish and white fish, works with oily fish such as grilled sardines, and refreshes alongside fresh salads.
