Description
Puro Rofe makes wine on Lanzarote in D.O. Lanzarote, where vines grow in pits dug into rofe, the lightweight volcanic ash thrown up by the island's eruptions. Mentidero Blanco blends the native Diego and Listán Blanco with a little Listán Negro, farmed sustainably. The rofe is central to the style: its dark, porous surface traps scarce moisture, insulates the roots from the constant Atlantic wind and radiates heat, letting the vines survive in an arid, barely irrigated landscape. That volcanic soil and the maritime climate give a wine with pronounced salinity and a firm mineral spine. It spends six months in barrel, a light touch that adds texture rather than obvious oak. The colour is pale straw-gold. The nose shows lemon, green apple and white peach over a briny, smoky, volcanic note. The palate is dry and taut, saline and mineral, the modest barrel work carried by bright acidity to a long, stony finish. Serve well chilled at 9 to 11 degrees.

Pour it with grilled fish, prawns and octopus, where the salinity and volcanic minerality echo the sea. It also works with roast chicken and green salads, and stands up to a little spice.
