Description
Puro Rofe is the Lanzarote project of Canarian wine merchant Rayco Fernández, working with organic growers who understand the island's volcanic terrain. Juan Bello blends the native Diego with Listán Blanco and a little Malvasía, farmed sustainably in D.O. Lanzarote. Lanzarote has more than 25 volcanoes, and its vines grow in rofe, the porous volcanic ash that retains moisture, shelters the roots from the relentless wind and lends the wines their marked salinity and mineral drive. The maritime climate and near absence of rainfall keep yields low and concentrate the fruit. This wine is aged eight months in oak barrels, longer than the estate's Mentidero, so the texture is a little fuller while the volcanic character stays in front. The colour is bright straw-yellow. The nose shows lemon, white peach and green apple over white flowers and a briny, smoky note. The palate is dry and mineral, saline and taut, the oak folded into a fresh, structured line that runs to a long, stony finish. Serve chilled at 9 to 11 degrees.

Additional information
Serve it as an aperitif or with grilled fish, clams and octopus, where the saline volcanic edge stands in for lemon. Its texture also carries roast chicken and lightly creamy seafood dishes.
