Description
PSI is the Ribera del Duero project of agricultural engineer and oenologist Peter Sisseck, also behind Dominio de Pingus, built around old-vine Tinto Fino. The vines average over 30 years and grow in small micro-plots on the stony limestone and clay soils of the appellation, where a continental climate of hot days and cold nights, set high above the Duero, slows ripening and keeps the fruit fresh. Maceration takes place in cement deposits, which conserve the grapes' aromatics, and fermentation is completely natural with no added yeasts, letting the site speak. Ageing combines cement deposits, oak vats and old French oak barrels, a mix that softens the tannins through gentle oxygen exchange while keeping oak flavour restrained so the fruit stays in front. The wine is deep and bright, with a nose of ripe black fruit, blackberry and blueberry over plum and a savoury earthiness. The palate is full bodied yet fresh, with concentrated dark fruit, fine grippy tannins and good acidity into a long finish. Serve at 16 to 18 degrees, decanted. It suits roast red meats, game and earthy mushroom dishes.
