Protos Verdejo comes from DO Rueda, made from vines on south facing slopes at La Seca in Valladolid. Rested three months on its lees, it is a crisp, aromatic white with pineapple, citrus and the herbal bite typical of Verdejo.

Description
Protos built its name on the reds of Ribera del Duero but moved into white wine in DO Rueda in 2006, relocating to La Seca in Valladolid to work Verdejo from its own vineyards. The vines sit on south facing slopes on the high Castilian plateau, where hot days and cool nights preserve acidity and aromatics in the fruit. Verdejo is picked to hold its characteristic citrus and herbal profile, then made in stainless steel and rested three months on its fine lees. That lees contact rounds out the mid palate and adds a subtle savoury depth without masking the grape's fresh, cutting character or introducing oak. The colour is pale lemon with greenish tints. The nose shows pineapple and citrus woven with the herbal, faintly fennel like note that marks good Verdejo. The palate is crisp and well defined, with green apple, lemon and white peach carried by firm acidity to a clean, slightly herbal finish. Serve chilled at 8 to 10 degrees. It suits grilled fish, shellfish and lighter poultry dishes.
