Protos makes this Rueda Sauvignon Blanc, extending a Ribera del Duero house founded in 1927 into white wine. Fermented in stainless steel and rested two months on its lees, it shows tropical fruit, green apple and citrus with a fresh, lightly textured finish.
Description
Protos, founded in the D.O. Ribera del Duero in 1927 and established in the D.O. Rueda since 2006, makes this Sauvignon Blanc on the high Castilian plateau. Rueda sits at altitude, with stony, free-draining soils and a strongly continental climate of hot days and cold nights that preserves acidity and lifts aromatics in white grapes. The wine is fermented in stainless steel to keep the fruit clean and primary, then held for two months on its fine lees. That lees contact releases mannoproteins into the wine, adding a little weight and a rounder mid-palate without masking the varietal character or the freshness. The colour is pale straw with green tints. The nose is bright and open, with tropical fruit, green apple, citrus and a light elderflower note. The palate is fresh and dry, the fruit carried on crisp acidity with a subtle lees-derived texture through a clean finish. Serve at 8 to 10 degrees in a white glass. It suits shellfish, grilled white fish and fresh goat cheese, and has the acidity for green salads.
