    This Port Dundas grain was from the independent bottler Signatory Vintage at 28 year old from 1995, drawn from cask 64902 and bottled at 58.4%. Only 176 bottles were released. Port Dundas, a vast Glasgow grain distillery founded in 1811 in the north of Glasgow, was shut in 2010 and demolished soon after. Most of its make went to blends rather than single bottlings, so single grain Port Dundas is uncommon.

    Made from a mash of wheat and malted barley and produced by continuous distillation in Coffey stills, this is a smooth, low flavour spirit built for long ageing. Ex-Bourbon American oak held the spirit, gentle wood that flatters light grain. At this age grain grows rich and oily, the long oak contact building real depth. A clean spirit and a long sleep let the oak express itself fully.

    Undiluted at 58.4%, it is intense. Broken down lignin lends vanilla and oak lactones a gentle coconut, with a butterscotch and toffee sweetness, atop the creamy grain make. The texture is oily and mouth coating, a hallmark of mature grain. The finish is long, sweet and softly oaky. This is a closing record of a distillery silenced in 2010.
