The bottler Speciality Drinks Ltd selected this Caol Ila, a 19 year old, bottled at 50.4%. Caol Ila has been bottled at every age from young and fierce to old and waxy. The six tall stills sit behind picture windows looking out to Jura.
It was distilled slowly from peated malt for a refined island smoke, giving a clean, lemony peat. A tired refill cask added little but time, the make speaking clearly. Oxidative maturity brings a waxy, fruity depth, ethyl esters of orchard fruit building as the peat turns gentle and coastal. The clean spirit shows the cask clearly, which is why it suits so many wood types. Sea air works into the maturing casks, lending a briny, coastal lift. Smoked citrus and a saline minerality are the hallmarks of the make. The make balances phenolic smoke against a bright, oily citrus. A gentle vanillin sweetness from the oak balances the coastal phenols.
At its natural 50.4% it is concentrated. A clean peat with sea salt and citrus, with a touch of vanilla and toffee. A maritime salt and a lemon lift run through it. A long, coastal finish carries a peaty warmth. This is a maritime, lemony Islay single malt.
