    Poli Elisir Camomilla Liquore is an Italian herbal liqueur produced by Poli, the historic family distillery in Bassano del Grappa, Veneto, in operation since 1898. It is built on a mild grappa that is macerated with camomile flowers, a combination that yields a particularly smooth liqueur pairing the fine floral notes of camomile with the structure of the grappa. Bottled at 30%, it sits at the gentle, floral end of the herbal category rather than the bittersweet one.

    The nose shows floral camomile with a fine sweetness and light herbal tones, while the palate is mild, soft and round, balancing camomile flowers and grappa before a long, smooth and pleasantly floral finish. Behind a bar it offers something unusual: a soft floral and herbal lift with a grappa backbone, useful where a delicate aromatic note is wanted rather than a bitter one. It works as a mild digestif neat or slightly chilled, pairs with fruit cake, panna cotta or biscotti, and adds a floral accent to dessert serves.
