Poisson Père Labat BIO Blanc 2021

Poisson's Pere Labat is one of Marie Galante's most reputed distilleries, and this organic blanc is a fine showcase of the island's high-proof white tradition. Distilled from fresh-pressed sugar-cane juice on a creole column, it is left unaged so the spirit's vivid cane character leads, bottled to organic standards at a robust 60%.

The low-rectification still keeps the vegetal congeners intact, and the result is intense but surprisingly well integrated: fresh sugar-cane sap, honeyed sweetness, bright lime and a herbal, beeswax-and-incense lift. For all its strength the alcohol stays in check, with tropical fruit and mint emerging on dilution. This is a blanc built for the Ti' Punch, where its cane, citrus and honey really come alive, though it rewards thoughtful neat sipping with a little time too.
