Description
Poisson Pere Labat BIO 2021 is an organic white agricole from the Poisson distillery on Marie-Galante, made from fresh sugar-cane juice rather than molasses. Pere Labat is a small, well-regarded Marie-Galante house, and in keeping with island custom its blancs are bottled high, here at a punchy 52%. As an agricole it carries no added sugar.
The creole-column spirit keeps the green, grassy cane core intact, with a nose of agricole funk, lime, pepper and flowers, a fresh, grassy palate brushed with vanilla and ginger, and a finish of tropical fruit, vanilla and citrus. What sets it apart is texture, a notably rich, oily mouthfeel from extended fermentation that gives the cane real weight at this strength. Vibrant and unaged, it is a Marie-Galante blanc made for a proper Ti Punch or a cool neat sip to read the organic cane straight.
