A single cask Barbados column still rum from Maison Ferrand’s Plantation line, finished in calvados casks and sweetened, pairing apple, pear and cinnamon with vanilla, coconut and a peppery, fruity finish at 41.3%.
Description
Maison Ferrand's Plantation bottlings are double aged in France and openly use dosage, so this is a softened, dessert leaning Barbados rum rather than a dry sipper. The draw here is the cask: a single 2014 column still rum given a finishing period in calvados barrels, the Normandy apple brandy that lends an orchard fruit accent.
That calvados influence shows clearly in pear and baked apple alongside cinnamon, while the underlying molasses distillate brings vanilla and a vegetal edge. The palate reads sweet and peppery, with the finish carrying vanilla, coconut and spice. At 41.3% it is gentle and rounded, the added sugar smoothing it toward an easy, fruit forward style; honest to say the sweetness is part of the design rather than something to gloss over.
