Description
Pingus is a Tempranillo red from Dominio de Pingus in D.O. Ribera del Duero, the small estate run by the Danish oenologist Peter Sisseck. The fruit comes from selected old Tinta de Toro vines between 50 and 70 years old across just 5 hectares, farmed biodynamically and organically with very low yields. Ribera del Duero sits on a high plateau on the northern meseta, where altitude and a continental climate bring hot days and cold nights. That wide diurnal range slows ripening and preserves acidity while the old, low yielding vines concentrate colour, tannin and depth in the fruit. The traditional cellar work and barrel ageing rely on slow oxygen exchange through the oak to round the tannins and frame the wine without covering it. At 15.5 per cent this is a powerful, structured red. The colour is deep, opaque ruby. The nose shows ripe black fruit, blackberry and plum with dark chocolate, liquorice, sweet spice and smoke. The palate is full and dense, the tannins firm and fine, the finish very long. This magnum holds 1.5 litres and ages more slowly than a standard bottle. Serve at 17 to 18 degrees and decant well ahead. It suits roast beef, lamb and game.
