Description
Picon is a French bitter orange aperitif first made by Gaetan Picon in 1837, built on the peel of bitter oranges with gentian and quinine bearing cinchona bark. The Biere bottling is the lighter version at 18%, made to flavour beer, a fixture of cafes across northern and eastern France.
The nose is fruity bitter orange with herbal spice and a gentian edge, the palate bittersweet and balanced with candied orange, gentle herbs and a clean bitterness. Its job is to season a drink: a measure stirred into a tall glass of lager makes the classic Picon Biere, cutting the sweetness and adding bitter orange depth, and it works lengthened with soda or stirred into a low alcohol aperitif. Serve it cold.
