Description
Philippe Pacalet, a leading figure in Burgundy's natural wine scene, makes this Vosne-Romanée as a monovarietal Pinot Noir from the Côte de Nuits. The grapes come from vines around sixty years old grown on calcareous clay soils farmed by organic principles. Vosne-Romanée is one of Burgundy's most celebrated villages, and its limestone-rich soils and old vines give Pinot Noir with depth, fine-grained tannin and a layered, savoury character. Winemaking follows a low-intervention path: whole bunches undergo carbonic maceration, then ferment with their own native yeasts without temperature control, which keeps the fruit fresh and lends a floral, perfumed lift. The wine ages seventeen months in French oak, largely used, so the wood frames the wine without covering the fruit or the site. The colour is medium, bright ruby. The nose is red and dark cherry with raspberry, rose, a touch of pepper, dried herbs and an earthy, almost truffled note. The palate is medium bodied, silky and fresh, with refined tannins, bright acidity and a long, savoury, mineral finish. Serve at 15 to 16 degrees, ideally from a large glass. It pairs with duck, game and mushroom dishes.
