Description
Philippe Pacalet is known for his low-intervention wines from Burgundy, where the vineyards are divided into tiny climats that give each site its own defined character. This wine comes from Puligny-Montrachet in the Côte de Beaune, one of the great villages for white Burgundy. The Chardonnay grows on limestone and marl soils that give the wine its cut and its mineral backbone, in a cool continental climate that ripens the fruit slowly and holds its acidity. The wine is made naturally, with organic and vegan farming, and aged twelve months in French oak barrels. Barrel fermentation and lees ageing build texture and a nutty, toasted complexity, while malolactic conversion softens the acidity and adds a rounder, buttery feel, and slow oxygen exchange through the oak knits it together. The colour is bright gold. The nose is layered, with lemon and white peach over hazelnut, toasted bread and white flowers, and the palate is broad and textured, its citrus and orchard fruit carried by a beeswax weight and a long, mineral finish. Serve at 11 to 13 degrees in a white Burgundy glass.

Serve with lobster or crab in butter, where the wine's texture and oak match the richness. It also suits meaty fish such as turbot and salmon, roast chicken in a cream sauce, and a well-aged hard cheese such as Comté.
