Description
Philippe Jambon is a small grower who farms 4.5 hectares organically and makes natural wines with as little cellar intervention as possible and no added sulphur. Une Tranche is a blend of 85 percent Grenache with the balance Syrah, drawn from vines around 45 years old on clay and limestone soils. The clay holds water through dry spells and gives the wine body, while the limestone underpins freshness. Part of the crop is vatted without destemming for a partial carbonic maceration, where whole berries begin fermenting internally, softening the extraction and lifting the aromatic red fruit before the rest of the fruit is pressed. Grenache brings ripe red fruit and warmth at a full 14 percent, Syrah a darker, peppery note and a firmer edge. Making the wine without sulphur keeps it open and savoury. Expect a warm, medium to full-bodied red with ripe plum, red cherry and raspberry, black pepper and a savoury, earthy finish, with soft tannins. Serve at 16 to 17 degrees. It suits grilled and roast meats.
