Description
Petit Caus Rosat comes from Can Ràfols dels Caus, in Avinyonet del Penedès, within the Garraf massif south of Barcelona. The vineyards are planted on clay-limestone soils, the chalky subsoil that gives the wine its freshness and structure, and farmed organically with no insecticides or pesticides. The wine is a blend of Merlot, Tempranillo and Syrah, harvested entirely by hand so only sound, ripe fruit reaches the cellar. The grapes are pressed gently and the juice fermented cool in stainless steel, which keeps the colour pale and protects the bright primary fruit, with no oak. The limestone holds acidity through the warm Mediterranean summer, giving the wine its crisp backbone. The colour is pale pink. The nose shows red berries and cherry with a touch of plum and a floral, citrus lift. The palate is fresh and dry, the red fruit framed by a clean, mineral acidity from the chalky soils, finishing on a savoury, refreshing note. The wine is balanced and easy without losing definition. Serve well chilled at 8 to 10 degrees. It suits roast chicken, pork, white fish and salads.
