Mezcal Tobala is an ancestral expression produced in Oaxaca at the Santa Sabia Palenque, following traditional methods rooted in the Ángeles family mezcal tradition. Made exclusively from wild Tobala agave, Agave potatorum, this mezcal highlights one of the rarest and most aromatic agave varieties used in mezcal production.
The agave is harvested at maturity and slow cooked in a conical, stone lined underground pit oven before being crushed and fermented naturally. Distillation takes place in clay pot stills, an ancestral technique that produces a softer texture and heightened aromatic clarity compared to copper. After distillation, the mezcal is rested and matured in glass, allowing the spirit to integrate without any wood influence and preserving the purity of the agave character. Bottled at 51 percent ABV, it remains expressive while balanced.
Aromatically, the mezcal opens with floral notes, fresh herbs and citrus, followed by orchard fruit and a clean mineral edge. The palate is refined and layered, with gentle sweetness, earthiness and subtle smoke that supports rather than dominates. The finish is long, dry and elegant.
