Description
Pescador de Sueños Pechuga is an Oaxacan mezcal from Santa Catarina Minas, the clay pot heart of mezcal making, where maestro mezcalero Jaime Hernandez builds it on Espadin from the San Juan del Rio area. It follows the pechuga tradition, a celebratory distillation in which the spirit is run a third time with agave hearts, raw chicken breast and fresh fruit suspended in the still.
The agave is milled in a traditional mill, cooked in a conical stone oven, fermented in juniper wood vats and distilled in copper, with the protein and fruit added between the second and third runs to temper and lift it rather than turn it savoury. Bottled unaged at 50% after a rest in glass, it is finely fruity, with mango like sweetness, anise and cardamom giving way to honey, vanilla, papaya, a touch of toffee and lightly smoked black tea across a long, herbal finish.
