Mezcal Madrecuishe Claw Edition showcases the depth and complexity of Madrecuishe agave, a wild and slow growing maguey that thrives in the semi-arid, mineral-rich slopes of Miahuatlán, Oaxaca. Produced at the Santa Sabia Palenque as part of The Claw Collection, this mezcal is crafted in tiny quantities due to the natural scarcity of the agave, making it a rare find for collectors and serious mezcal drinkers.
The agave hearts are slow roasted in a conical, stone lined pit oven, which gently caramelises sugars while preserving the vegetal and floral character of the raw material. After cooking, the agave is crushed traditionally, often with mule-drawn tahona, before being fermented in large Sabina wood vats that allow a rich spectrum of flavour compounds to emerge. Distillation is carried out in copper stills, a method that brings clarity and balance to the spirit.
Once distilled, the mezcal is matured in glass, allowing it to integrate and smooth without the influence of wood, preserving the purity of the expression. Bottled at 48 percent ABV, this mezcal opens on the nose with a blend of earthy minerality, tropical fruit and bright citrus, followed by deeper notes of brown sugar, flint and gentle smoke. Herbal and floral hints add complexity, while the palate is rich yet balanced, drawing out tropical and orchard fruit layers framed by subtle spice and earthiness.
