Description
This single barrel comes from Licorera Cihuatán in El Salvador, a distillery with a strong reputation for its aged rums, here selected unsweetened by Perola from a single ex-bourbon cask. Distilled on pot and column stills from molasses and bottled at a full cask strength of 53.6% after seventeen years, it is a serious, mature expression.
The nose offers dried figs, caramel, candied fruit and a touch of young wood, while the palate turns to milk chocolate, roasted notes, barrel and baked apple, finishing on hazelnut, tonka bean, a creamy texture and more baked apple. Drinkers describe it as a solid, rather dry and spicy Salvadoran single cask carrying the house signature of hazelnut, tonka and orchard fruit, with a floral lift on the nose. As an unsweetened, full-proof aged rum it rewards slow neat sipping, perhaps with a few drops of water to coax out its spice and chocolate.
