Description
Pérez Pascuas Gran Selección is a varietal Tinto Fino, the local Tempranillo, from Hermanos Pérez Pascuas in D.O. Ribera del Duero, the top wine of a family estate in Pedrosa de Duero in Burgos. Ribera del Duero lies high on the Castilian plateau, where the wide swing between hot days and cold nights extends ripening, fixes deep colour and keeps acidity firm, giving Tinto Fino its dark fruit, structure and ageing potential. This is the estate's flagship, drawn from its oldest and best fruit. The wine spends twenty-six months in French and American oak: the long ageing and slow oxygen exchange through the staves polish the considerable tannin, while the two oak origins layer fine spice and structure from the French with vanilla and sweet toast from the American. Time in barrel and bottle develops the tertiary tobacco and leather notes of a mature Spanish red. It is deep garnet. The nose is complex, with ripe plum and black cherry over tobacco, leather, cocoa and dried herbs. The palate is full bodied and structured, the tannin dense but fine, the finish long. Serve at 17 to 18 degrees, decanted well ahead. It is a wine for serious roast meat.
