Description
Peraj Ha'abib is a Kosher red made by Celler de Capçanes, a cooperative in the village of Capçanes in Tarragona, within D.O. Montsant. As a Kosher wine the entire process is carried out by observant Jewish hands under rabbinical supervision, which shapes the cellar work but not the source fruit. That fruit comes from the licorella slate and clay soils that ring the Priorat, where the poor, stony ground forces low yields and deep roots, and a warm Mediterranean climate ripens the Cabernet Sauvignon, Cariñena and Garnacha fully. The old vine Cariñena brings acidity and dark fruit, the Garnacha warmth and red berry, and the Cabernet backbone and structure. After fermentation the wine spends 12 months in French oak that knits the tannins and adds a savoury frame. The colour is deep ruby. The nose shows ripe blackberry and forest fruit, black pepper, liquorice and dried Mediterranean herb. The palate is full and firm at 15 percent, with ripe tannin, a stony depth and a long spiced finish. Serve at 16 to 18 degrees, decanted. A strong match for roast lamb.
