Penfolds builds Bin 8 from Shiraz and Cabernet Sauvignon sourced across South Australia, the multi-region blending that defines the house style. Drawing fruit from several warm-climate sites lets Penfolds balance the ripe, dark-fruited generosity of Shiraz against the structure and cassis of Cabernet, with each component picked where it ripens best. South Australia's warm, dry growing season pushes both grapes to full ripeness and high sugar, giving the wine its weight and warmth, while cooler sub-regions and night temperatures keep acidity and definition. The wine is aged twelve months in oak, where slow oxygen exchange rounds the tannins and layers in vanilla, spice and chocolate around the fruit. The colour is deep. The nose leads with blackcurrant and blackberry over clove, oak spice and dark chocolate. The palate is full and powerful, the ripe black fruit framed by firm Cabernet tannin and a warming, spiced finish. Serve at 17 to 18C, decanting an hour ahead; it suits grilled and roasted red meats and aged cheese.
