Description
The Bin numbers are a Penfolds tradition, each one marking a particular batch and blend held back in the cellar. Bin 8 pairs Shiraz with Cabernet Sauvignon, two grapes that suit South Australia's warm, dry growing season: the Shiraz brings ripe plum and pepper and a full body, the Cabernet adds firmer tannin, cassis and a darker frame. Warm days build ripe fruit and higher alcohol while cool nights preserve acidity, and the two varieties are matured together for 18 months in a mix of French and American oak. French oak lends a tighter, spicier grain, American oak a sweeter vanilla and coconut character, and the slow oxygen exchange through the barrel softens the tannins and settles the wine. The 2017 is concentrated and full bodied, with ripe red and black fruit, black pepper, a touch of vanilla and cedar from the wood, and a savoury, leathery edge. Tannins are ripe and the finish is long. Decant briefly and serve at 17 to 18 degrees. Good with roast and grilled meats and hard cheese.
