Description
Bin 407 sits a step below the flagship Bin 707 in the Penfolds Cabernet range, offering the house style at an earlier-drinking weight. It is a multi-regional South Australian blend, assembled from Cabernet Sauvignon grown across the state so the winemakers can balance fruit, structure and ripeness each vintage. Cabernet's thick-skinned berries deliver deep colour, firm tannin and the variety's signature blackcurrant fruit, while the warm South Australian climate ripens it fully and rounds the tannins. The wine spends eighteen months in a mix of new and seasoned American and French oak, a smaller proportion of new barrel than Bin 707, so the oak supports rather than dominates. Slow oxygen exchange through the wood softens the tannins and adds dark chocolate, cedar and sweet spice. The result is deep crimson, with blackcurrant, plum and mulberry over mint, dark chocolate and tobacco. The palate is medium to full bodied, the tannins firm but supple, the finish long and savoury. It drinks well now with air and will hold for several years. Decant ahead and serve at 18 degrees with grilled beef, lamb or aged cheese.
