Description
Pedro Méndez farms in the Val do Salnés, the coolest and most Atlantic corner of Rías Baixas in Galicia, where Albariño reaches its most saline expression. The soils here are granite and sand, free draining and low in fertility, which keeps yields modest and concentrates aroma in the grape. The maritime climate brings high rainfall, cloud cover and cool nights, so the fruit ripens slowly and holds its natural acidity. Viticulture is organic, and the wine is made without additions to keep the focus on site. Fermentation in stainless steel at low temperature protects the primary fruit and the citrus lift, while a period resting on the fine lees adds a light textural weight and a faint bready note without any oak. The result is a pale straw wine with a green tint. The nose is lemon, green apple and white peach, backed by white flowers and a clear salty mineral note. The palate is dry and taut, with bright acidity carrying the fruit to a clean, savoury finish. Serve well chilled at around 9C in a standard white glass.
