Description
Pazo de Senorans makes Tras Los Muros in D.O. Rias Baixas, in Galicia, from Albarino grown in the plots closest to the winery, which give the wine its name, behind the walls. This is not a typical Rias Baixas Albarino. Galicia's cool, wet Atlantic climate and granite and sandy soils give Albarino its high acidity, its citrus and stone fruit, and a saline edge from the maritime setting. The grapes are picked by hand into small crates. The wine is aged for six months in oak barrels, then rests a further six months in stainless steel before more time in bottle. The barrel ageing, with time on the lees, adds texture, breadth and a light savoury depth that sets this apart from the bright, unoaked style, while the steel and bottle time let it settle and integrate. It shows pale gold, with a nose of lemon, grapefruit, ripe pear and white flowers over a subtle toasted note. The palate is dry and full for the grape, with citrus and orchard fruit, a creamy centre and firm saline acidity through a long finish. Serve at 10 to 12 degrees in a white-wine glass.

Additional information
A richer Albarino built for shellfish. Pair it with prawns, crab and lobster, seafood rice and grilled fish, where the saline acidity cuts the richness. Its extra body also holds up to roast chicken and hard cheeses.
