Description
Pazo Señorans Colección is a single-variety Albariño from the D.O. Rías Baixas in Galicia, produced by the Pazo de Señorans winery. The grapes grow on lowland clay soils close to the Atlantic, where sea air and high humidity shape the ripening and press a clear saline character into the fruit. After a hand harvest into small crates and a careful sorting in micro batches, the must is macerated on its skins to draw out aromatics and phenolic texture, then fermented at controlled temperature. The wine is held for around thirty months before release, an extended period on the fine lees during which yeast autolysis releases mannoproteins that build body, soften the acidity and add a bready, savoury complexity uncommon in young Albariño. It pours pale straw with a green tint and shows aromas of sea spray and iodine over green apple, lemon and white peach, with a subtle doughy note from the lees. The palate is dry and structured, the salinity and citrus acidity carried by real weight through a long finish. Serve at 9 to 11 degrees.
