Description
Pazo de Señorans is one of the reference names of Rías Baixas, based in Val do Salnés, the cool coastal subzone widely regarded as the birthplace of Albariño. This is a varietal wine from the estate's own 17 hectare vineyard. The maritime climate here is damp and Atlantic, so the vines are trained high on trellises to lift the fruit away from ground moisture and expose it to sunlight, which limits disease pressure and helps the grapes ripen evenly. The soils are granitic and sandy, feeding the grape's naturally high acidity and its saline, coastal character. After fermentation the wine spends five months on its fine lees and a further four in bottle before release. Lees contact releases mannoproteins that broaden the mid palate and soften the sharp acid line without any oak. The wine is pale straw with a green tint. The nose is precise, led by green apple, lemon and white peach with a floral top note. The palate is fresh and tightly focused, the fruit carried on brisk acidity to a dry, salty finish. Serve well chilled at 8 to 10 degrees in a white wine glass. It is a natural match for shellfish and grilled white fish.
