Description
Pazo das Bruxas is the Rías Baixas white from Bodegas Torres, the family firm founded in Penedès in 1870 and now working across several Spanish regions. It is made entirely from Albariño, the signature grape of Galicia's Atlantic coast. The climate here is cool and wet, with maritime breezes and a long, mild growing season that let Albariño ripen slowly while holding its high natural acidity, and the sandy granite soils drain freely and give the wine a saline, mineral cut. The wine is made young in stainless steel with no oak, and the reductive, temperature-controlled handling protects the grape's floral and citrus aromatics and keeps the fruit fresh and primary. It is suitable for vegans. The colour is pale lemon with a green tint. The nose is bright, with lemon, white peach and green apple over white flowers and a hint of melon. The palate is crisp and dry, its citrus fruit carried by lively acidity and a clean, saline finish. Serve well chilled at 8 to 10 degrees in a white wine glass. It is at its best with fresh seafood and grilled fish.
