Pazo Cilleiro produce this varietal Albariño in the D.O. Rías Baixas, a winery belonging to Bodegas Muriel. Harvest, transport and winemaking follow traditional methods. What sets this wine apart in the appellation is a long débourbage, where the pressed juice is left to settle and clarify slowly before fermentation, giving a cleaner, more precise base, followed by a shorter maturation that keeps the wine fresh and primary. Rías Baixas is a cool, wet Atlantic region of granite and sandy soils, and this maritime setting gives Albariño its high natural acidity and a saline lift. Made without oak, the wine keeps its focus on fruit and place. The colour is pale with green highlights, and the nose is fresh and Atlantic, with green apple and peach behind a delicate citrus. The palate is light and lively, the fruit tightened by a bright acidity and a subtle salinity on a clean finish. Serve well chilled at 8 to 10 degrees. It is a natural match for shellfish and fish, and a crisp aperitif.
