Description
Payet & Riviere is an artisanal Reunion distillery, and this Rhum Traditionnel En Amplitudes is made from sugarcane honey, a concentrated cane syrup, rather than fresh juice or standard molasses, with a seven-day fermentation giving it extra depth.
The long ferment and cane-honey base produce a soft, textured rum: a floral, fruity nose with syrupy, sugary notes, a smooth, fresh palate carrying mint and honey, and a finish of sugarcane, licorice and a vegetal, lightly sweet edge. At 43.6% it is gentle and rounded, with an oily, slightly waxy texture and a beeswax character that sets it apart from a standard white. A distinctive, honeyed Reunion rum for drinkers who want something softer and more aromatic than a dry cane-juice blanc.
