Description
Paul Chavy launched his own label in 2020 after years working alongside his father Jean-Louis, carrying the family reputation for depth and precision into a fresher, more modern style. This wine comes from Les Damodes, a premier cru at the northern end of Nuits-Saint-Georges where the slope meets Vosne-Romanee, on limestone and marl soils that give the village its firmer, more structured take on Pinot Noir. The Côte de Nuits sits on a fault line of fractured limestone that drains freely and forces the vines deep, concentrating the fruit, while the cool continental climate and east-facing aspect preserve acidity and slow ripening for a long, even maturity. Ageing in French oak, part of it new, adds a fine tannic grip and a subtle toasted frame without masking the fruit. Expect a deep ruby colour and a nose of blackberry, dark cherry and black plum lifted by clove, black pepper and a savoury, earthy undertone, with subtle toast behind. The palate is structured and classic, firm but elegant, with leather and minerality on a long finish. Serve at 16 to 17 degrees in a Burgundy glass, ideally decanted in its youth. It suits roast beef, game and mushroom dishes.
