Description
Paul Chavy, son of Jean-Louis Chavy, makes this red from Pinot Noir in Gevrey-Chambertin, the largest and one of the most celebrated villages of the Côte de Nuits in Burgundy. Gevrey is known for fuller, firmer Pinot Noir, a character that comes from its limestone and clay soils and well exposed slopes, which ripen the grape while the cool continental climate keeps acidity and aromatic detail intact. The wine ages in oak barrels, where slow oxygen exchange through the wood settles the tannins and adds quiet spice without covering the fruit or the floral lift. Farming is sustainable and the wine is vegan. The 2023 vintage gives ripe, fresh fruit. It is a bright, medium ruby. The nose leads with red cherry and wild strawberry over violet, rose, dried herbs and an earthy, mineral note. The palate is medium bodied and savoury, with fine firm tannins, fresh acidity and a long finish. Serve at 15 to 16 degrees. It suits game, poultry and earthy dishes, and rewards a year or two of bottle age.
