Description
Paul Chavy comes from a family with six generations at Puligny-Montrachet, having learned at Domaine Jean-Louis Chavy before setting out on his own. This is his regional Bourgogne Pinot Noir from the 2023 vintage, farmed sustainably. Pinot Noir at the Bourgogne level is typically drawn from younger vines and cooler, lower-lying parcels across the Côte, which gives a lighter framed wine built for early drinking rather than long ageing. The thin skins of Pinot Noir carry little tannin, so the appeal here is fruit, freshness and perfume. Ageing is split between two vessels: eleven months in oak barrels for a touch of spice and a rounder texture, and seven months in stainless steel, which preserves the bright acidity and keeps the fruit vivid. The result is pale to medium ruby. The nose is fresh and lifted, with red cherry, redcurrant and a floral note over a hint of forest floor. The palate is light and crisp, the tannins soft, the finish clean. Serve at 14 to 16 degrees, a little cool. It pairs well with roast chicken, duck and mushroom dishes.
