Patrick Bouju makes P & G in the Auvergne from Gamay and Pinot Noir, fermented with native yeasts and raised in clay amphorae. The unlined clay keeps it pure and lifted, giving a bright, perfumed red of red cherry, raspberry and floral spice.
Description
P & G is a Vin de France red from Patrick Bouju and Justine Loiseau of Domaine la Bohème, made from Gamay and Pinot Noir in the Auvergne. The name points to the two grapes, both cool-climate varieties that suit this high inland region of volcanic and granite soils. The cool climate and free draining stony ground hold the fruit fresh and aromatic, which is the foundation of Bouju's bright, low-intervention style. Fermentation is spontaneous with native yeasts and without temperature control, and the wine is then raised in clay amphorae. Unlined clay allows a slow, gentle oxygen exchange like a barrel but adds no wood flavour, softening the texture while keeping the wine pure and transparent. Little or no sulphur is added. The result pours a bright, translucent red. The nose combines the juicy red cherry and raspberry of Gamay with the finer, more floral and earthy side of Pinot Noir, lifted by dried rose and a peppery note. The palate is light to medium bodied and silky, with low, fine tannin, fresh acidity and a clean, mineral finish shaped by the amphora ageing. Serve slightly cool at 14 to 16 degrees, with no need to decant.
