Description
Patrick Bouju is a leading natural grower in the Auvergne, in central France, and here he takes Melon de Bourgogne, the grape of Muscadet, well inland from its Atlantic home. The wine is farmed and made with minimal intervention, without added yeasts or corrective additions, and bottled as Vin de France. Volcanic and granitic soils run through this part of the Massif Central, giving whites a firm mineral cut and low pH. After a slow native fermentation the wine spends 24 months in fibreglass, an inert vessel that adds no flavour of its own and lets extended lees contact build texture and a gentle yeasty depth, much as a Muscadet sur lie would. The result is a taut, dry white, pale with a faint haze from the unfiltered making. The nose is restrained, with lemon, green apple, pear and a briny, chalky note, and the palate is lean and saline with a persistent, mouth watering finish. Serve cold at 9 to 11 degrees.
