Paso a Paso Tempranillo comes from D.O. La Mancha, made by Bodegas Volver, part of the Jorge Ordóñez group, with Rafael Cañizares as winemaker. La Mancha is a high, dry plateau in central Spain with an extreme continental climate: cold winters, hot summers and a large seasonal and daily temperature swing that lets Tempranillo ripen while keeping its freshness. The surrounding mountains block humid fronts from the coast, so the vines stay healthy in the dry heat. The wine is aged in oak, which softens the tannins through slow contact with the wood and adds vanilla and a light toast to the fruit. It pours mid ruby. The nose is led by red berries, cherry and plum, with vanilla and sweet spice from the barrel and a dried-herb, faintly leathery savoury note that is typical of the grape. The palate is medium bodied and rounded, the tannins supple, finishing clean and savoury rather than heavy. This is an everyday Tempranillo built for the table rather than the cellar. Serve at 16 degrees. It suits roast and grilled meats and hard Spanish cheeses. Vegan.
