Parés Baltà makes this organic Penedès rosé from Garnacha with Syrah and Cabernet Sauvignon. Farmed without chemicals on a family estate worked since 1790, it is fresh and dry, with red berries, peach and a light peppery lift.
Description
Ros de Pacs Rosat comes from Parés Baltà, a family winery at Pacs del Penedès in Barcelona province that has farmed the area since 1790 and is now run by the third generation. The estate works organically and biodynamically, using no chemical products, with sheep to fertilise the vineyards and bees to aid pollination, so the wines reflect a healthy, living site. This rosé blends Garnacha with Syrah and Cabernet Sauvignon grown across the varied Penedès terrain, where altitude and the sea breeze from the Mediterranean temper the warm climate and help the fruit keep its acidity and aroma. The grapes are pressed gently to take pale juice and fermented cool in stainless steel to protect freshness and hold a dry style. The colour is a bright pink. The nose shows red berries and cherry over white peach and citrus, with a light peppery note from the Syrah and a floral lift, while the palate is fresh and dry with clean acidity and a long finish. Serve well chilled at around 8 to 10 degrees. It works as an aperitif and with grilled pork, poultry and white fish.
