Parés Baltà make Honeymoon in Penedès from Parellada grown at El Subal, around 630 metres up in the Catalan hills, farmed organically. Fermented cool in steel at 11.5 percent, it is delicate and floral, with pear, apple and white blossom.
Description
Honeymoon is a varietal Parellada from D.O. Penedès, made by Parés Baltà, a family winery run by the third generation of the Cusiné family. The fruit comes from El Subal, a vineyard at around 630 metres in the Catalan hills, farmed organically. Penedès has a mild Mediterranean climate, but the height of this site brings cooler nights that slow ripening and preserve acidity and aroma, which suits the delicate, floral Parellada well. Fermentation is carried out cool at 15 degrees in stainless steel, a method that protects the grape's fine aromatics and keeps the wine fresh, with the low 11.5 percent alcohol adding to its light, easy feel. The wine is pale straw with green tints. The nose is delicate and floral, with pear and apple and a lift of white blossom. The palate is light and fresh, gently fruity with a soft, dry finish. Serve well chilled at 8 to 10 degrees in a white wine glass. It is an easy aperitif and pairs with light white fish, green salads and fresh goat cheese.
