Description
Parés Baltà makes Ginesta from Gewürztraminer grown on the single estate of Finca Cal Rossel, high in D.O. Penedès at over 500 metres above sea level, and the wine is certified organic and vegan. Gewürztraminer is one of the most perfumed of all white grapes, and altitude is central to this style: the cool nights of the elevated site slow ripening and preserve the acidity that this aromatic, low acid variety can otherwise lack, keeping the wine fresh rather than heavy. The fruit is carefully selected, then fermented at a cool 15 degrees in stainless steel over sixteen days, a clean, reductive method with no oak that captures the grape's floral aromatics in full. The wine is pale gold with a faint pink tint the variety can show. The nose is classic Gewürztraminer, with rose and lychee, ripe white peach, elderflower and a note of ginger spice. The palate is dry to gently off dry, the aromatic weight balanced by the altitude acidity and a clean, lightly spiced finish. Serve chilled at 9 to 11 degrees.
